Making some bhut jolokia jerky today, then off to Tacoma shopping to get out of the house while it dehydrates. The fumes from those can make you cry worse than onions

that would be either a top round or an eye round, two seperate muscles all of course comes from the hind quarter ( the lean end ) bottom round will work just as well as long as the rump roast was removed. i tend to use bottom it is cheaper and just as lean.
