So I recently replaced my battery, and placed the old one behind my drivers seat to dispose off. As always, I got distracted and didn't dispose of it immediately, and a day or two later my truck started to smell bad. Evidently the battery tipped over, and apparently started leaking onto my mat and carpet.

I poured baking soda on the spill to try and neutralize the acid, and wiped it up. Afterwards the truck still smelled bad, so I poured lime juice on the spot in case I didn't fully neutralize it. Unfortunately the smell still remains, so I rented a carpet cleaner and tried to use that to clean all of the carpets.

Alas, my truck still smells like Sh!t.

Do you guys have any advice to remove this awful scent?

Replace the mat and carpet. It's a bit of work, but you can find threads on here that show you how to.

At this point, I'd be pulling the carpet and mat. That acid will percolate under there for a very long time and you'll likely end up with some rust in that area. Also, the fumes will corrode everything in your cab that is exposed and prone to corrosion.
In the 'you have nothing to lose' category, I'd mix up a large quantity of baking soda and water and liberally soak the carpet in that area. After it soaks in for a while, shop vac it out and repeat.
Seriously, the funk you're smelling is acid fumes. That crap will continue to give you problems. Address it sooner than later. You need to get the baking soda down to where the acid ended up.
