    This. Just got back last night after spending almost 2 weeks on the North Shore of Lake Superior grouse hunting. The cabin has a built in grill with a lid. I take my grill grates and a bag of charcoal with some apple wood chunks. Splatchcocked a chicken and put the coals and wood chunks at one end of the grill, chicken at the other end.

    Had this guy checking me out the whole time from about 60 yards away. Think he was a chicken hawk eyeing my bird. I called him baldie.

    I am guessing here but think you are likely talking about those pellet poopers that everyone is selling now, AKA: easy bake oven. They are here to stay and not a fad. I am not a fan of them however. Got a Pit Boss Horizontal last year and as much as I try just can't warm up to it, the flavor is not the same as real wood. Friend of mine that has a Big Green Egg says the same thing. But most people like them. As long as YOU like it that is all that matters. I don't care for the flavor on them personally but that is me, and a few others. If you do a really long cook they can catch up to wood chunks IMO and come closer.

    Smoking is here to stay. How else can you make bacon?

    Smoking meat is around to stay for me. Meat and fire is all it takes. I'd rather smoke in the teens below than the 90's so use an automatic temperature controller rather than walk outside when it is cold enough to make your face hurt.

    But will often just use the snake method on the 26" kettle, have done it enough that I have a pretty good idea when it is done

    For that matter a chunk of apple wood over a vortex on a 22" kettle will make some of the best wings you will ever eat

    ^^ Yeah, I should have been more clear, I was thinking of pellet smokers like the Traeger. So, we like smoking meat but there are many older school ways to get that done with wood instead of pellets?

    This Friday-Sunday will be our new reduced hours, 9-5 but only those three days.. For the last 30 years we've been open daily except like Christmas, New Years, Thanks Giving..
