    Here we go.

    Portuguese inspired breakfast. Sweet potato and butternut squash hash with chouriço and sage, poached eggs, and finished with peri peri sauce (sweet/sour/earthy/tangy). Apple pear fruit salad with black grapes and cinnamon honey Greek yogurt.

    Italian lunch. Creamy Tuscan chicken white bean soup with fire roasted tomatoes and homemade bacon fat. Garden salad with pickled pepperoncinis and bacon fat vinaigrette.

    Latin America with Caribbean relatives. Smoked spicy (dried habanero) cinnamon pork tacos with cilantro mango salsa. Hatch chile brisket queso by request.

    Probably American. Maple marshmallows with molasses croutons, Hawaiian salted caramel and cayenne chocolate sauce, Hershey’s bar and Reese’s peanut butter cups (because I’m lazy).

    American breakfast. Sour cream scrambled eggs with whole milk chive sauce, smoked pepper bacon, and a sweet roasted habanero sauce (not pictured). Candied oranges with Greek yogurt and citrus caviar over a rosemary simple syrup.

    Everything is from scratch (minus the Hershey and Reese’s components. It doesn’t have my regular presentation because I was cooking for 12 people, but the flavors were there. I’ve completed the recipes for anyone interested. Thanks for coming to my TED talk.

    The restaurant industry is saturated. Most plebs don’t “get” good food. I don’t want to end up hating cooking. I don’t have the funds or kitchen experience to run a restaurant. We’re in a pandemic. Rent is expensive. How many other excuses can I come up with?

    I get it. Many of the same reasons I won’t open a woodworking business or start a YouTube channel. But mostly it’s fear of the unknown....

    Thats why im not running my own garage. I could probably do it in my sleep, but if it goes south Im not sure I can handle that level of failure. IM my own worst critic and beat the hell out of myself if I fail at something.

    I mean.... I’d have a hard time saying no to that... But, do you like having room to carry anything more than a back pack? Also, I’m not a big fan of speeding tickets, hence my slow looking Tacoma that no one notices doing 85 on the freeway.
