I currently have a 2.5" strut spacer lift and a 2" block lift on 265/75/16 tires.

I am looking to ditch the spacers and blocks to upgrade to Bilstein 5100s in the front and 5160s in the rear. Will I be able to keep the same size tires?

From a quick search, that tire size works with stock suspension. I would assume you will be fine.

A few OE parts from fancy trucks
So you are going to set the front clip to zero and return to OE height/rake? Or just bump up the front to become level with the rear?

Asking because you'll have no lift in the rear, as shocks don't create lift.

Those tires will be fine if they are on wheels with OE specs
