    I went about 40 hours longer on the cure but I might dial it back to only a day longer next time.

    $30 pork belly. I cut it into thirds. 1/3 went to this and I got 6 vacuum packs of 8-10 pieces of bacon. 1/3 went to PBBE two weeks ago. 1/3 is in my freezer waiting for something else. So it's a good value.

    I keep my jar in the fridge as well. I’ve always been wary of it going rancid even though I grew up seeing it stored in a jar on the stove???

    As do I. It's run thru a sieve into a... bacon grease container. It still has small bits of meat in it. Not leaving it out in room temp.

    Lately we haven't exactly follow "the rules" for holiday food. Christmas the last two years we made homemade pizzas. This year for Thanksgiving we talked about getting takeout from our favorite Indian restaurant but instead decided to make it ourselves. Since you don't exactly want Indian dishes to mix like turkey, potatoes, etc can, I just opted to refill the bowl.

    First up, pressure cooker palak aloo (spinach and potatoes)

    All were over seasoned cauliflower rice. Some gluten free cinnamon rolls were made, too, but I won't be having any as I'm trying to stay away from the carbs.

    Thai food from fresh veggies and salmon for lunch .... and going to a friend's house for turkey and shrimp tonight ...:hungry:

    My Thai wife likes to go to all of the asian markets and she gets some unusual fruits and veggies (not shown in these pics) ... with hesitation :rolleyes: I have learned to like them.
    I am learning to like cooked pumpkin and pumpkin soup ... :oops:

    I still can NOT eat those stinky little cooked river fish :eek: (with head on) that she buys. ......... She has to cook that stuff outside.

    We eat almost everything with a spoon :confused: (Thai style) and rarely use a knife.

    Well dinner prep has begun:

    low carb Cranberry Sauce with a touch of orange. Man this is good.

    And low carb sweet potato(less) casserole with candied pecan topping. Who knew you could do this with cauliflower and butternut squash. Silky smooth and great flavor!

    Enjoying a carb smart Thanksgiving without sacrificing on all the things we love. Garlic Mash, Turkey and Gravy, Sweet Potato Casserole, Orange Cranberry Sauce, killer low carb Dinner Roll, and a nice Salad. Happy Thanksgiving Everyone...oh BTW this Low Carb Life has now successfully lowered my A1C to 5.1 down from 7ish. Doc says If I keep it up I’m no longer considered at risk for Diabetes.

    One of my favorite things about Thanksgiving, leftovers....
    Smoked turkey with cornbread dressing and gravy, sweet potato casserole, green bean casserole with a home made mushroom cream sauce, creamed corn and cranberry marmalade.
