Here’s my jambalaya and gumbo I made a while back

 

Smoked a turkey on Thanksgiving day, and had a friend drop off a fried turkey too. Picked both carcasses clean, and used the bones to make the stock, today.

Just added all the picked meat, some sausage & andouille. And made a roux, to add to all that. We'll have about 3 gallons of gumbo to freeze up for future dinners.

 

I'd weigh about 500 lbs if I lived in Louisiana...lol

I like almost everything, but the combination of spices with a "French twist" on sauces makes the dishes down there my favorite!

 

temps have tumpled to 48° so it’s gumbo night.

Not an LSU grad, but I grew up in Buras loving the Tigers. I'm a dirty Vol grad, but don't spread it around lol. I joined after Katrina because they had some good on the ground people getting word back about areas where my family lives. Stuck around because TD is a decent board like here.
