Well guys and gals, I finally found a solution to the lack of thermometer in my truck.

I bought the unit on Amazon. They're commonly used for aquariums and it was under $20. The leads are only 3 feet long, but you can cut and splice in new, light gage wire and the unit functions accurately. For power, I didn't feel like running a power source from my fuse box so I cut the end off an old car phone charger and used it. It's plugged into the power outlet, and when I don't want it on, I can just pull the plug and drop the end in the little cubby below the unit.
For the housing, I cut a small block of wood and cut and shaped it until it fit the corner well. Then I cut, heated and wrapped some Kydex around it, cut in the hole, wired it up and viola.
I soldered and shrink wrapped the splices under the hood and behind the unit, and smeared some RTV on the splice under the hood to make it more water resistant. The end of the outside thermocouple is taped (black Gorilla tape) in the grille, near the bottom.
I had a cheap unit mounted a few months back but it quit working. The wires that I had routed through the firewall were used as donors for the new unit so I didn't have to rerun these.
In all, it turned out really well and is easy to read when rolling down the road. It's kind of bright but it's location has it positioned behind my right knee when I'm driving so the glare isn't a problem. If I want to read it, I just move my knee or my head. This wasn't planned but worked out great. If anyone is curious, I can try to post a link to the unit.
