Hi would it be a bad idea to just change my stock front and rear shocks to something more off-road suited like bilstein 6112/5110s or Foxes without lifting it or installing UCAs and a new leaf pack?

Nope. Not a bad idea at all. It's what I did with my foxes.

Same with me, I swapped out the stock suspension with more stock suspension (trd pro suspension). I dont need a huge lift, I dont really offroad much, I just wanted the better handling, the slight lift it came with, and being able to say I have fox suspension.

Where I live, the most offroading there is are pot holes and the random dirt road.

I did exactly that - removed the oem and added 6112/5160. No lift. Made the truck ride way better and firmer. No corner lean. Just a nice firmly planted ride.

Agreed. No soft brake diving like the soft OEM Bilsteins

Hey you can't do that! I'm calling the police.

Yeah when I get my UCA's installed I'll level the front and that's about all I'll do.

TRD Pro suspension with Headstrong 3 Leaf AAL, DV8 OR front slimline bumper & Engine Skid Plate, RCI OR high clearance bumper, CaliRaised Trail Edition Sliders, Spidertrax 1.25" Wheel Spacers, 265/75 16 GY Duratracs, wrapped the OEM wheels, OR Roof Rack, Extang Exceed Hard top Tri fold tonneau.
No problems at all, I replaced the OEM TRD Off Road Bilstein shocks and coils with a used set of TRD Fox Pros and couldn't be happier, made a world of difference both off and on road, much firmer and controlled, and no more brake dive. It brought the front up about 1 3/8", pretty much leveled the truck.
