    I'm by no means trying to tell you what to do so please don't take it that way.

    I smoked a deer back strap last year and over cooked it. I consulted @Bigdaddy4760 and he told me to smoke it to an IT of 130 degrees, reverse sear it, then let it rest. I tried this a few weeks ago and it was the best ever. Did it again Sunday and it was awesome.
