    I used to be vegetarian till I went to Brazil a few years back where they pretty much only eat meat. My girlfriend is vegan so I mostly eat vegan now, unless she's gone and it's football Sunday and I want to splurge and eat wings/bbq. My cholesterol has been cut in half since I have been with her (a year now) so that's pretty cool.

    We eat a lot of Trader Joes (she works there and we get 20% off) vegan dishes which are all delicious- our go to's are the veggie wontons with frozen fried rice packs, vegan orange chicken, pierogis, impossible or beet burgers, tons of fruits and nuts, and other stuff. Homemade we cook vegan pasta casserole with a vegan cheese roux mixed with spinach tomatoes and other veggies, potatoes a million different ways, veggie curries, veggie soups/stews, spaghetti squash filled with whatever you like, charcoal grilled asparagus with lemon squeezed over them, could go on.

    I am a vegetarian. I cook a lot of Eastern European foods, as I am of Lithuanian descent and also really like mushrooms and root vegetables. There are a lot of great recipes from that part of the world that make extensive use of them.

    I actually just made a batch of potato/mushroom/onion pierogi last night (see below). They were entirely vegan, the filling was all of plant origin and I do not use eggs in pierogi dough. I also make vegetarian koldunai, which are Lithuanian dumplings similar to pierogi, with the same dough recipe and a filling of Beyond Beef (it's by far the best meat substitute I've had), mushrooms, onions, and minced walnuts.
