Tires that are 275's are 10.83" wide... I'm not sure where you are getting the 11.8".

The 275/65/18 tire is ~32.07" tall and the 275/70/18 is ~33.16" tall. With a 3" lift you are going to have a lot of rubbing issues with the 275/70/18 tire. Your better bet is the 275/65/18 tire if you want to avoid major rubbing.

295/65/18 tire is ~11.6" wide and 33.1" tall, which in my opinion is too big.

My tires are 285/70/17 (11.22" wide and 32.8" tall) and I had to remove the mud flap and trim the fender. If I flex the suspension (stuff the tire into the wheel well) it rubs the body mount with the wheel turned. Ideally I should cut the body mount to avoid this, but I'm ok with the way it is.

There are several people on this forum running 285/65/18 tires and they work well with a 3" lift. You may want to check out some trucks running that setup to see what you think as far as sizing and looks. I'm pretty sure chris4x4 is running that size tire, so you can check out his setup.

Another thing to keep in mind is that every tire manufacture is slightly different, so I would go to a local tire shop and get their input... after all they do specialize in tires and can give you more insight. If you have your mind set on 18" wheels and what to get close to a full 33" tire, they may be able to point you in the right direction.
