this is the way. Pork shoulders have plenty of intermuscular fat, cap is not really needed.

I leave mine on because my pitboss runs hot since the firepot is so close to the grates. The fat cap acts as a sort of insulation layer.

Yes but grate temps are 25-50* more than set temp.

 

Well the new recteq was fun while it lasted. Not that I’ve smoked salmon on it I’m told that it’s totally ruined.

Seafood in general. Smoked salmon dip is one of the few things from the sea I like though.

I mostly cook Salmon in the oven, 425 for 20 minutes or so. Perfect, adds a little crust and a little sweetness to the outside. GF says its the best salmon she's ever had.
