I want to add this 1/2” shim to give me a little more height in the rear. Will I need new longer U bolts? They said I will but it looks like I should have enough thread using the stock ones. i’ve searched on here quite a bit but haven’t found a definitive answer.

Is the ruler on the nut or the plate?
If the ruler is on the nut then you should have plenty of thread engagement plus almost a 1/4".
Otherwise, you likely won't have enough threads.

The simple rule is you want two full threads protruding beyond the face of the nut, this ensures everything is fully engaged to hold. I agree with the above, you should be fine based on the photo.

Only aesthetic mods so far Leer 180 cap & Clazzio covers on order.
My simple rule for structural fasteners is 'at least one bolt diameter projection beyond the nut.'
1/2" bolt should project 1/2" beyond the nut.

Lol. Might as well make it 10". The truth is the last thread must be fully engaged in order to get full clamp force, so one thread past top of nut.

    1" NC bolt = 8 TPI so 4 threads = 1/2"
    3/4" NC bolt = 10 TPI so 4 threads = 3/8"+
    1/2" NC bolt = 13 TPI so 4 threads = 5/16"

    I'm used to working with 1/2" contour thread = 6 TPI, so 1/2" = 3 threads.

One bolt diameter is almost always a safe bet.

Looks OK. 1.5 threads past the top of the nut is the minimum standard in commercial aviation (i.e. still safe with A&P mechanics just out of school earning minimum wage, working 12-hour graveyard shifts, in a third world country...)
