Tried something new tonight. Ground speed goat calzone with pepperoni, salami, spinach, mushrooms and black olives.

What’s a “speed goat?” I hope it’s as cool as it sounds .....

Very cool! No antelope where I roam. I’ve got black tail deer, moose and bison in the deep freeze though.

I’ve heard pronghorn is among the best table fare of all wild game.

    All great options!

Antelope is next to elk for my palate. So long as they aren't completely run to death and you get them on ice quick, the meat is exceptional.

Morning everyone. Took more meat to our butcher for pepper sticks, sweet bologna, and a little ground. Picked up a left and right hind quarter made into jerky and small amount of ground. Jerky is awesome with just the right amount of heat, more you eat the hotter it gets. Sure does make the yellow labels go down! Lane to his shop takes you right to the base of the mountain, is long and windy. Great fella, we always shoot the breeze for a bit when I stop in.

This sounds awesome. I have a few lbs of Antelope left in the freezer. Might need to give this a try.

Not much going on here. went out Sat. to feed and pull SD cards. some scrubs on cam all still holding horns.how to tell your getting old. field too soggy to drive on so me and my son carried feed to far back corner. its longer than it looks. I had a 50lb bag and he had 100lb. well he kept getting further ahead and never stopped. i stopped to switch shoulders a few times. got within 85yds and told him to come get it. aint what i use to be.B0CE684E-02E9-43DF-A8AB-990ADD6BE6D1.jpg

Antelope in the rut are a lot of fun to hunt. Eating though is subjective. They taste a lot like what they eat. There's a difference between scrub sage and alfalfa fields. I'm no expert, but have shot 6 or 7 and I find it so-so. We just used the antelope for chili and it was great. My kids would be disappointed if I used anything else.

Meat taste and quality probably has more to do with age, location, time of year, processing, and preparation than actual species.

I'm headed to TX in April to shoot a few axis does for my daughters wedding. We will shoot at least 3 and leave the backstraps attached to the ribs like a rack of lamb. We are also serving red snapper from the gulf. For folks that don't eat wild game or fish, there's a McDonalds down the street.
