    Cool. I think we are going to have the ribs cut off for anyone wanting ribs and the loin sliced into thin cutlets. We don't want to waste food on people who won't eat it but still have plenty for those who do. We will also smoke a couple of the back legs for extra meat if needed. Probably not much meat on the ribs but should be tasty.

    Man, there is a lot of awesome going on in this thread! Keep it up, seeing everyone's table fair gives motivation for next year! I'll contribute a little here: made a 5lb batch (3lb of ground venison, 2lb of ground pork belly) of Teriyaki Hunter sticks. And I found a package of elk shanks in my deep freeze, so made osso buco immediately haha!

    Got my Utah euro back. Not going to lie, I was pretty proud of it until I saw the 213” deer the taxidermist shot, lol. Biggest damn deer I’ve ever seen.

    As far as the TX hunts, I've been hunting with the same outfit for about 10 years now. I don't want to debate the whole TX hunting thing, because people who have never been already have their mind made up about it, and I just don't care what type hunting or grocery getting people want to do with their own money as long as it's legal.

    I'm more of a free range, no frills, DIY type guy when it comes to hunting. I've hunted a lot of places in TX through West Texas Hunts | West Texas Hunt Organization . They are more for the common guy who doesn't want pampered and doesn't mind hunting a little harder, although they do have some nice, easy hunts as well. They have hunting rights in many different places in TX and can arrange whatever you are after, whether it's free range aoudad, elk, mule deer, exotics, etc., as well as high fence hunts, guided or DIY.

    In April I will be hunting free range axis does on a ranch that my daughter and I have hunted free range whitetails on 3 or 4 times before. Pretty no frills bunk house to stay in and plenty of wildlife. Genetics are good, but not great and certainly not high fence quality. Price is equivalent to the trophy quality expected, and doesn't go up if trophy taken is better.

Me and a few friends are hoping to make it to texas next year for an audad hunt. Semi guided. I have no idea how the operation is run. My buddy is in charge of all that stuff. I'm just along for the ride lol.

    I went back to California to visit some family last week. I was planning on tying in a pig hunt. Found a small ranch that charges about 200-300 per hunter per day. The goal was to hunt during our stay there but circumstances changed while we were there so it didn't happen. Would be tons of fun though. Most other ranches are $600+!! I aint paying that much for pigs.
