Was doing some research on this but couldn't find a definitive answer. Would something like a 255/85/r16 or similar (33's) rub is they were on the stock steel wheels (16x7) with a 3"F/2"R spacer lift?

It should work hight wise, that's a tall skinny tire so you MIGHT be ok. Biggest problem would be the tire rubbing on the UCA.

Thanks! Any suggestions on how to avoid UCA rubbing, would some simple wheel spacers do the trick?

You shouldn't have any UCA rubbing issues, I would say that'd be the least likely place it'd rub. The tires you're looking at are 1cm narrower than the stock tires that came on your truck so technically you should have ~5mm MORE clearance between the tire and UCA than your stock tires.

If you have rubbing it will likely be on the mud flap or bottom of the bumper. Unfortunately, there is NO definitive answer to this kind of question. Different brands of tires are all slightly different sizes, different wheel offsets and alignment settings play a role...blah...blah...blah. Seems that every truck is slightly different and just because one person had success does not mean that you will. Plus, lots of people will say "no it doesn't rub" but they're just driving smooth roads and that same setup may rub a lot if you're really stuffing the suspension while off roading. And some suspension will be setup for more travel that would allow for rubbing whereas someone else's suspension may not allow for that same amount of travel...

That said, I'd go for it, seems most people have little to no rubbing. I regret not going with 255-85-16 but it'll likely be my next tire.

Lots of good info here: https://www.tacomaworld.com/threads/255-85-r16-owners-experience.155849/
