What is the ideal rear suspension setup for a daily?
In short I lifted my truck with Bilstein 5100’s, Eibach 2.5 coils, and icon aal. I like how it sits and the front suspension feels amazing but the rear feels fragile. I will occasionally bottom out the shocks on speed humps and I dont like how “light duty” it feels in the back. Im looking at potentially a different leaf/shock setup? Or hydraulic bump stops? Or even sumo springs if that’s actually a good option

Explain what you mean by Fragile and light duty.
And by bottoming out, do you mean your rear shocks are fully compressed (need taller bump stop), or fully extended (need limit strap or longer shocks)?
There are many options for rear bump stops that are better than the hard stock bump stop. Wheeler's superbump, Timbren, AllPro Universal, etc.

The fragility comes from the fact that the rear suspension bottoms out on residential speed humps at 20mph. With these AAL’s being “progressives” and having removed the overload I expected to reduce my weight capacity and improve ride in general? Considering I’m never loaded or towing I didn’t expect the weight of the bed to be too much for it. I’m not looking for a trophy truck but I want a good all around setup. I just don’t want to ride around looking like I squatted the thing

You should probably upgrade the rear leaf pack entirely. If you have no additional weight and want about 2-2.5” of lift the icon RXT stage 1 or Deaver u402 stage 1 work well. Just make sure you have an appropriate Shock length for +2” rear lift give or take.
