Monkfruit in the Raw on Amazon has a few bags for $5 or so. You could try it in your rub on a chicken to get an idea of the flavor :notsure:

Sous vide does weird things with time more than temp. I haven’t done pork but I recently did a tri tip at 131 degrees for 6 hours and the meat fell apart more like a perfect brisket than tri tip. I love watching Guga foods and sous vide everything (or everyday) on YouTube. He does a lot of experiments with sous vide.

Smoked a brisket last weekend with my dad, turned out fantastic! Also smoked some burgers, they were a little overdone but still turned out pretty good. IMG-4084.jpg IMG-4085.jpg IMG-4082.jpg IMG-4083.jpg

Finally broke down and bought a Costco membership yesterday. The closest one is an hour drive, but I think it will be worth it.

The biggest takeaway, brisket for $2.99/lb. That's less than half the price for brisket at any of my local stores that I have ever seen, even on sale. Their brisket was almost half the price of their chuck roast, and I will buy chuck roast in my town because it is half the price of brisket!

I didn't get one just because I didn't come equipped to carry cold food and we had other stuff to do in town also, but next time. Oh hell yeah, next time.

Mine only has prime and at $2.89. In the off season it’s usually $2.59! Now, the produce is not always the best buy. You’ll want a more seasonally focused grocer for that.

    I’m proud of you!

Also, we have the $120 membership because we end up getting the bulk of our groceries there and get cash back. We got a check from them that covered the cost of the membership and then some... so... depending on how your year goes, consider it!
