    Not a crockpot... but same idea? 3 ish hours to go for birria tacos.

    I had some of the best ones yet over the weekend. I was officiating a wedding and had some time to kill, so I found an abuela owned food truck nearby. I created a recipe based on her instructions — I hope I do her food justice!

    I know that this is a crock-pot thread, but also that there's a couple of people who are cooking Gluten-Free like I am. I've been tinkering with a drop biscuit recipe to go with soups/stews, and I've finally come up with one that works (has the right texture/flavor) like normal biscuits would so I figured I'd share it.

    1 ½ cups King Arthur measure-for-measure GF flour (this is my go-to GF flour mix; yours should work too but I know they're all different so YMMV)
    4 tablespoons butter
    ½ teaspoon salt (if using unsalted butter; 1/4 teaspoon if using salted)
    3 teaspoons baking powder
    1 1/8 cups milk (1/8 cup is 2 tbsp)


    1. Add flour and salt to a large bowl and mix well.
    2. Cut butter into flour with a fork or a pastry cutter until well-blended (flour should be in pea-sized crumbs)
    3. Add milk and mix well.
    4. Drop by spoonfuls (1-2 tablespoons per) onto a lightly greased baking sheet or cast iron griddle (preferred*)
    5. Bake at 350 for 15-18 minutes


    *I like cast iron over a baking sheet because it takes longer to heat up, which keeps the bottoms of the biscuits from cooking too fast

    It’s lengthy, but I’ll get what I did typed up tomorrow. Expect 4-6 hours of kitchen time between prep and cooking (depending on meat tenderness).

    If its not to much trouble that would be awesome. I would love to give it a shot. We eat a ton of Mexican food but rarely ever make it at home.

    A little Mojo Pork in the crockpot...

    Cut up a pork shoulder, bay leaf, jalapeño, onion ,garlic, orange, lemon and lime juices and some seasonings.

    Pulled out the bay leaves and pureed the vegetables at the end and added back to the shredded pork. Damn delicious!

    It may not look appetizing in the crock pot, but it will be delicious on a bed of corn tortillas with shredded cheese, sour cream and jalapenos. It's Pork Carnitas.

    Kind of a dead thread, but hoping for some quick advice? I followed a tri-tip sirloin slow cooker recipe that says to cook on low for 6-8 hrs and turn off when meat reaches 145,°. I've only had it on for 3.5 hrs and temp is 180°, but potatoes and carrots aren't even done yet. Should I take the meat off now and let the rest cook through, or turn the whole thing down to warm?

    Beef Birria

    Soup:
    1 lb chuck roast
    1 lb bone in beef short ribs
    1 lb bone in oxtail
    5 dried ancho chilies
    5 dried guajillo chilies
    5 dried chilies de arbol
    2.5 quarts beef stock
    2 carrots rough chopped
    1 yellow onion, rough chopped
    10 garlic cloves, smashed
    6 oz can tomato paste
    1 tbsp cumin
    Salt to taste

    Herb Sachet:
    1 cinnamon stick
    5 bay leaves
    1 tbsp toasted coriander seeds
    1 tbsp toasted black peppercorns
    1 bunch fresh oregano

    Tacos:
    Corn tortillas
    Shredded Oaxaca cheese
    Chopped white onions
    Chopped cilantro

    1. sear meat, destem/deseed chilies
    2. In the meat fat, soften onions/carrots and add tomato paste - cook until loose
    3. Add garlic and soften, add beef stock and salt
    4. When simmering, add chilies, meat, herb sachet
    5. Cook for 1 hour. Remove vegetables, chilies, 2 cups of broth and blend. Add back to pot.
    6. Cook additional 2 hours. Remove/shred meat, remove bones, add meat back
    7. Serve soup or make tacos

    For the tacos: dip the tortillas and toss on cooking surface, add some meat and shredded Oaxaca, fold and crisp both sides. Garnishes optional, but recommended.
