On the the way home check engine light came on and I noticed the temp needle was below operating temp. Got a code for PO128. I have a 12 Tacoma V6. Would this be the thermostat or a sensor?

Sounds as if you need to grab a new thermostat and some antifreeze! Toyota parts will help prevent doing it more than once

I changed thermostat now it’s starting to over heat so I’m guessing it’s air. Any easy way to get the air out of the system

Gotta purge air from it.... don’t let it get to hot for to long... sometimes we should ask questions before we damage things that get expensive real fast! Shut her down and cool off. Open the rad cap and top it off...... gotta purge her

Should be pretty much self bleeding but you can take the little hose off the top of the thermostat housing to let the trapped air out if there is any, just don't do it while it's hot.

When I say overheat I didn’t mean anywhere near redline. I know better than that.

Gauge should run right in the middle and coolant temp should run 180-190.

Yeah it started climbing a tad above that. I lost a little coolant when changing but it hasn’t sucked any down from the reserve so I’m guessing it’s because of air

It's normal for it to "burp" some air when the thermostat opens and sometimes they will get slightly past normal before it does but don't let it get up too far past, both radiator hoses should get hot when it opens.

What I like to do is when I don’t have a vacuum tool is to let the rad cap off while the engine is idling... turn the heat on high and pay attention to the temperature and the air pockets coming from the radiator... top off the coolant reservoir over the “full” line so that when it does cool over over night or whenever that it’ll take it from the reservoir. Once heat is present from the vents the you know you’re on the right track.
Pop the rad cap back on when you feel you have no more air pockets and hot heat. Check the coolant level the next day.

Stick the truck on an incline and make the radiator the highest point. I'm a little lazy.

Easiest way is parking on a good incline with the rad being the highest point, or jacking up the front and putting it on jack stands. Once it's cold enough, open the radiator and run it up to temp so that the thermostat opens and top it up as it gets the bubbles out. Did the thermostat have a pinhole in it? This helps purge the air by allowing it to get past the thermostat and the thermostat to open.

Done it a few times. Park on incline and let idle without the cap, turn heat on all the way.

try to get a funnel that fits in the radiator to prevent spilling
