I got a rear bumper that has all of the holes for the sonar sensors, but access cabs don't come with that option it seems. So I'm wondering if I can get the sensors and wiring from the dealer or even from a junk yard and just plug-n-pray myself. Has anyone done this?

For starters check the underside of the rear bumper and verify if you have connector BE1.

Access Cabs come with that option. You can an Access Cab with just about every option as a Double Cab except for Leather Seats and Sunroof.

As for your question, Toyota generally pre wires the trucks the same so there’s a good chance your wiring is there and you just have to pop in the hardware. However the amount of work involved may not be worth the cost of just getting the tech package

Haha trust me I’ve looked into these sorts of things for a while. Just last week I looked into adding the rear bed light switch. The open wire is literally just sitting behind where the switch would be.

But then I saw the actual light itself on an access cab is completely different and I talked myself out of it.

Don’t let me discourage you though. Just stating my opinions

Write to MESO, he is working on an adaptor for that issue.

Doesn't appear to be under there, sadly.
