How did get these to work on a Prinsu rack? I thought they would only fit the FrontRunner rack?

As @jrlin718 already said, they’ll work with any T slot style bars.

I’ve used those same Front Runner quick releases on a Sherpa rack on my 3rd Gen 4Runner.
