Is there any way to tap into the hitch trailer plug wires. Was planning on running a wire along chassis all the way to the battery but yeah has anyone done this?

I ran a dedicated line to the bed from an auxiliary fuse box I added, but I suppose you could. The battery charge output of the 7-pin is rated 40A.

You could also buy a 7 pin hitch plug, wire in the two wires you need, and just plug that into the hitch trailer receiver when you need the compressor. Only other downside is the truck needs to be running for the trailer charge circuit to have any power.
