I have a 2004 Tacoma Xtra cab so my backseat is minuscule but I wanna try to fit like a 12" sub in the back. I've been looking at different options but I haven't found anything very functional and practical yet. Are there any recommendations that yall would have?

Pretty much any 12 will fit. You'll need at least 1 cubic foot of airspace not counting the sub and the materials. What's your budget & goals? What's in the rest of the system? Looking for a self-contained unit or individual components?

Haven’t really put too much thought into how it’ll look yet. My budget I wanna say is around 600-700, and I have a aftermarket head unit but otherwise everything else is stock. I know I’ll need an amp and all of that. Im not sure what the best route is yet. Meaning wether if it’s a standalone box or something.

If you're just looking for something to fill in the low end with stock speakers, a 12 is going to be over the top. If it's over the top you want, it should be do-able in that price range.

Yea I was thinking like a 10” - 12” but what I was mainly wondering is what is the best approach to installing them? Like can I just get a regular sub with a box and mount it so it doesn’t fall or do I need something else?

If it's secure enough to stay put in a crash, that's really the only must have. Use decent OFC wiring & put a fuse as close to the battery as possible - as well as one at the amp. Use an appropriate box for the sub.
