I had just puchased the 02' truck has stock exhaust and was not real familiar with the exhaust note when I installed a K&N panel filter. It seems the exhaust and engine sounds different; more prominent or throatier. In some ways it seems to have more "pop" or "rasp" than my 01' 4Runner with V6, but it's gone I can't do a comparison

I'm not reversing the change but I was going to change back just to see if the filter was the difference but also thought I might ask here.

The 2.7 is a pretty decent sized engine considering it's not much smaller that some V6's such as the Ford 3.0 Duratec. As I recall the 2.6 Isuzu I4 were louder than the the 2.8 V6.

Can the additional air moving through the engine change the exhaust note or engine tone? Have you observed this?

Yes the engine will sound more aggresive under high revs, enjoy
