Owning both a Highlander and a Tacoma I recently noticed the redline is different between the two, with the Highlander pushing the redline higher.

Both use the same engine model, what are the differences between the two (engines)?

Different tunes, likely different cam profiles etc.

My wife had a 2020 Highlander for a short bit. The power train was a lot more smooth and responsive than my Tacoma. There is a video on youtube by CarCare Nut that explains the difference between the two engines.

    7,250rpm here.

As you can see, HP and TQ are dropping off nicely, which gives a nicer shift than tickling the 6k limiter:

    Yep.
Valve timing for intake&exhaust, ignition timing and design differences for intake&exhaust.
I run a tune that uses stock Camry's valve timing and adjusted ig timing and you can see a difference.

Tacoma is tunes for less HP and more torque lower in the RPM range for reliability.

Underhood temps are a major concern as well, along with emissions, fuel economy etc.

Highlander makes way more power, but isn't designed for sustained loads.

The tuning including available valve timing ranges are different between the two. There are a number of key differences between different variants of the 2GR.

But, it is similar enough that it could handle the higher revs without breaking or anything. It’s just tuned differently, making those higher ranges less useful.
