The truck I have a deposit on is listed with additional stuff I dont care for:
    Toyoguard Platinum
    Extra charging cables

I got the actual VIN today, and these addons are not reflected yet. Sales manager tells me it's been sitting at the port since 10/15/2021.

Is there anyway that I can avoid these add-ons being added at the port (Sales guy says nothing he can do)

And is there a more accurate idea when I can expect the truck? He tells me sometime later this month

Toyoguard Platinum is not a physical thing, it is a service contract. I have no clue about charging cables, but I would assume it only applies to plug in hybrids (Prius, Rav4). The tonneau cover is a port installed option that would be an example of something you didn't want that would need to be dealt with. So I wouldn't worry about either thing until you go to sign a contract with a finance manager after the truck is delivered. I would assume you have what is equivalent to a copy of the allocation request that you were given with a receipt for your deposit.

I would be on the lookout for any price changes or "market adjustment fees" that would be tacked on to the final contract.

As for when it will arrive, the dealer is really your only resource as they should be notified when it gets loaded for transport from the port to the dealer. Since most dealers have been making a lot more sales this way, they could look back at their delivery schedule and look how long other orders took to ship from arrival at port to delivery to dealer, but I assume later this month is about as close as you are going to get.
