    The weather outside is frightful but I made some thing delightful. New York sirloin seasoned with Jacobsen’s salts check them out. Amazing product.

    I love grilling in the cold weather because we never did it when I was a kid. This is a well marbled New York sirloin. Made with some brown rice and I do a peppers stuffed with shrimp sprinkled with some Bermuda dark swizzle sauce from angry goat pepper company.

    Looks good and I’ll be peeking the Jacobsen salt (and others)! Educate me, what is the difference between a Texas/Wyoming/california/Idaho/Spanish/Australia/Antarctica/Illinois sirloin and a New York sirloin?

    It’s literally the universal definition of the cut it’s the sirloin half of a T-bone removed from the bone. You can get a bone in or no bone. Called a New York sirloin.     I also sliced the fat edge two or three times before grilling to prevent it from tightening and curling up

    Thermapen is a great investment. Quality instrument and very handy for cooking and baking and poking your eye out.

    I put off buying a thermapen for a long time. Finally broke down and bought the infrared Thermapen last time I was in the city. I don't know why it took so long. Easily one of the best things I've bought. Perfect for managing the fire and the zones on my offset. Checking internal temps in two seconds is awesome. Worked well on my banana bread this morning too.

    I have a CharBroiler Acorn, about half the cost of the Green Egg and it is fantastic. It's like an oven, slight open/close of the vents controls the temp perfectly. A lot of people complain about the seals falling off or not sealing, have had it for three years and it works as well as the day I bought it.

    I usually do 30% briquets for longevity and 70% lump charcoal for even heat with a heat deflector for everything I grill, sprinkled with mesquite chips. But that's not the awesome part . . . .

    You really have to try grilled french fries. Uh huh, that's what I said . . . take a 3" deep disposable baking pan (though we repetitively wash and re-use them,) rub it down with olive oil, and put one layer of frozen crinkle cut fries on the bottom lightly sprinkled with Lowry's seasoned salt. Don't use thin or french cut, they don't come out as well.

    Put the pan directly on the grill for 10 minutes or so, then move it up to the top rack when you put the steaks on. With my Acorn the edges need to get bent a little to fit but it works.

    I couldn't believe it the first time, it's like I never had fries until I tried them grilled. The mesquite flavor cooks right into them and they are absolutely amazing. It's 20° and going to set out some steaks to grill lol

    Had a acorn to begin with and they are great grills! Sold it when I moved and found a great deal on a kamado and it’s great! Making some pizza tonight.
