When the temperature drops in the winter, my clutch pedal gets very stiff and almost has a 'delay' to come back up after I release it. Is there any winter maintenance I'm missing on the clutch system or shall I just keep living with it?

It has done it since I got it and I just chocked it up to thick fluid when its -18° Fahrenheit here.

Mine get's like that too anytime the temperature is below about 40F, returns to normal once I drive a bit.
