I have 887 coils on 5100. They sagged pretty bad only providing 1 1/2 lift. Getting ready to put a winch and aluminum bumper that weights around 100 pounds all together.

would like to try and bring the lift back up to 2 or 2 1/2 inches.

    many recommendations?

You might want to consider changing the 887 coils to 888 or 886 coils. 887 coils are for stock weight on the front end. I would do 886 if it were me.

Do the 886 sag like the 887 and 888?

Do you still have the stock coil springs? I don’t have direct experience with bilstein 5100s, but I’ve been on this forum long enough to know that they were designed to work with the stock coils and they have a preload adjustment to dial in your ride height.

Have you measured your hub to fender distance or are you eyeballing the amount of lift you have?
