Truck is sporadically sluggish

    When you hook up an obd reader, hit the erase codes function. That might solve the problem.

    Obd readers, most auto parts chain stores have one and will hook up for free. Shops have them but will most likely charge. It’s a good one to have in your toolbox. Prices vary extremely, like $20 or over $10k.

    Make sure your battery terminals and posts are clean, posts aren’t oxidized as in black. I’ve seen bad connections cause some strange symptoms.

    It could also be a fuel starvation issue. Pump going out. Strainer clogged.

    Certainly seems related to the fuel system in some way. Do as said above and get a scan tool to measure fuel trims.

    Napa may have a more advanced scan tool. they let you rent.

    Other option is a in town mechanic. I can’t imagine they charge you a whole lot or anything to scan and see it should take 15mins.

    The gas pedal itself ( signal sending unit ) and the throttle body are both known to fail, I had the same problem at cold start up and replaced both after cleanings did not solve it. Codes were never thrown.

    As others have stated. Spark Plugs, filters, and a clean TB would be a good (and cheap) start
