I have decked storage in a 3rd gen 5' bed Tacoma. I'm debating on whether I should route the 100/400w bed power into the side of the ammo can or mount a new inverter inside the ammo can. I have a couple questions.

    1) what is a reasonable limit for power on a 3rd gen Tacoma? Is there any reason I cant use a 1800w RMS inverter for short periods of time?

    2) brands. What is a reputable inverter brand? Everything I've seen looks like generic trash.

    3) what should I be aware of when routing 120v in an automotive application? I have decent electrical knowledge but I'm not an electrician. Like the NEC for building code, what rules SHOULD I consider if I was running 120v inside a vehicle?

An 1800 watt inverter will draw something over 150 amps from your battery. That might be usable for very short periods of time. (if you have adequately heavy wiring to the inverter.)

To turn your question on it's head, why do you need that much wattage of 120power in your truck? There's 12v options for pretty much everything these days...

I have a 750W inverter in the cab and ran 4 gauge welding wire to accommodate the peak starting wattage for the inverter + resistance on length of wire. You might be able to do it, but you'll need very thick wire, a high-amp cutoff switch (mine's 300 amps), and a direct connection to the battery(ies). Oh yeah, and I'd recommend a second battery.

Separate circuit straight to battery with fuse. The internal only gives 100w peak in gear.
Current matters Little if alternator can keep up voltage over 11.2 on the battery.

I have a LiPO battery charger that pulls 2000w continuous plus the losses of the power supply. I almost never use the full 2kw but I regularly use wayy more than the 400watts that Tacoma can do in park not to mention the 100w in gear.
