Truck seems to track straight after new wheels/tires but tire shop recommended an alignment anyway. Is an alignment standard operating procedure after a tire change? Never done it on my other vehicles.

Its a good idea, especially if you changed wheel specs, to get the optimal wear out of the new tires. Is it required? Nah, but $100 can go a long way on some $200-300/per corner tires.

    Oh look, another mod....
If your truck drove straight before you changed out tires/wheels it will drive straight AFTER you replace them. Assuming they mount & balance the tires correctly. This will be obvious by the wear patterns on your old tires.

There are times that new tires are out of round and cause issues that make you think you have an alignment issue.
