I usually prepare big batches of 60-70+ brats for my club here in San Diego (www.srop.org) for our events. I haven't tried piercing the casings
because it would be time consuming. I might give that a try next time I make a small batch. Thanks for the recommendation

I was just asking, because that was the only reason I could come up with, with why you would rationally cook something in beer for that long.

 

30 minutes or so with brats in beer and they have enough flavor. IMHO. Important to heat simmer then allow to cool a bit. Sucks in some beer goodness with no piercing.

 

You are adding onion and garlic to that boil, right? I had a Chief from Wisconsin who taught me that it's required BY LAW.

Onions yes, and a dash of Worcester sauce. Haven't tried garlic.

 

Try the "Long simmer" method. I get rave reviews from the drunks in my club.

My wife just made chicken salad with homemade creamy cilantro dressing, so good.

 

It was a little too salty.

 

Not enough cilantro.
