The Chinese Char Siu was a bottled sauce from the Asian Market. Marinated for a day then grilled.

The Japanese Garlic Miso was 4 cloves of minced garlic mixed with 3 tablespoons of Red Miso and marinated overnight and a few hours before grilling added 2 Tablespoons of Soy Sauce and 2 Tablespoons of Mirin.

This stuff burns pretty easy so after removing them from the marinade, they were wiped off. Still got some good char on them.

Another trick is to poke holes in the skin of the wings before marinating them. I've seen people use a fork for this but I prefer to use one of those little corn cob holder things. It's smaller holes and sharper.

 

Also, if you use GF soy sauce, the Garlic Miso wings then remain GF.

The Char Siu I used is NOT GF.

 

as I have gotten older I can't stand cooking in the heat. I am not hungry when I am sweating balls anyways. it is HOT here, and my house was built before it ever was this hot, therefore no AC. I cook outdoors when I can, but if if is 104 in the evenings, no thanks. yesterday, I ate a shaved ice dessert for dinner. hahah.

today? I cooked this morning. I made chicken and Bitter Melon on my outdoor wok, so I dont heat up my kitchen. tonight I just need to cook some white rice. BOOM. I pulled out a tiny sampler for breakfast.
I need to look into getting AC installed.

I agree! This is my go to. I use it for holes in veggies to release steam, etc. Great use if you’re missing one from the set too!

Consider a “Portable A/C” suitable for the primary room you occupy (Bedroom or Den). They’re portable, so use where needed. They’re reasonable cost wise, versus a window unit, a split or whole house.
