This is how you make Shrimp Diavolo.
Peel 2 lbs large shrimp and make a stock of the shrimp peels, 1c white wine and the juice from a can of San Marzano tomatoes.

    thumbnail_IMG_2072.jpg

Drain through a colander to collect stock and set aside. In the same pan add oil, 1tsp oregano and 1/2tsp red pepper and a lot of garlic. This is literally all the spice you will need.

    thumbnail_IMG_2077.jpg

Cook for a few minutes and add a can of chopped anchovy and cook a minute or two more. You can save the oil for the end if you wish.

    thumbnail_IMG_2076.jpg

Add the canned San Marzano tomatoes and mash with a potato masher to a good edible consistency. Continue to cook.

    thumbnail_IMG_2078.jpg

Add the stock you made. Cook a few more minutes and add the 2lbs. shrimp. Don't overcook the shrimp. Sample a couple to make sure.

    thumbnail_IMG_2081.jpg

Add a couple chopped pepperoncini and a couple tbs. of the juice. Gives a nice briny quality and color.

    thumbnail_IMG_2080.jpg

Remove from heat and add a lot of fresh chopped basil and parsley. Stir.

    thumbnail_IMG_2079.jpg

Lastly, add a couple tbs. of some good olive oil or the anchovy oil. The recipe says to serve with pasta but I love it with rice because it sucks up the sauce. Warning-this dish will make your wife's clothes come off. It is a hazard but it's worth it in the end. Believe me! Enjoy.
