I’m looking at installing a Baja Designs 30” light bar on my bumper. Am I able to run a separate, single on/off switch or do I need a switch pro or something of sorts? Thanks in advance!

You can do either. I have a single switch going to my 30 inch grill light.

Exactly what @crashngiggles said, either option works for the wiring, it is totally up to you as to how you want it. But functionality it will be the same.

Just really depends on how much you plan on adding down the road.

As the previous post says... if you plan on other accessories, a switch pro (or similar device) makes it very easy. Only have to run the switch pro wiring through the fire wall once... and can hook up a bunch of stuff easily. if you go independent switches, then each wire will have have to go through the firewall.
Although I guess if you don't know... once you run that one wire for the light bar through, and you decide to use a switch pro or similar in the future, you can use the single wire to pull the switch pro through.

One perk of the BD light I got (I believe S8), you can separately wire the amber backlights to turn those on independently of the main light (see picture below).

I put a BD light bar behind my front grill. And honestly... it's the least used light I installed (for me... I've encountered exactly zero scenarios where I wanted to use it). Other lights (side scene lights, rear lights off the back of the roof rack and flush lights in the rear bumper all get used regularly.
