    I made homemade wontons. these are the ugly ones that didn't pass my Quality Control department. AKA, wife.

    I thought I would deep fry them, but the hot oil thing was too much for the moment. I elected to boil them, and toss them into a spicy Szechuan chili oil. boom!! dinner time.

    I can't explain how or why this is so good. easiest sandwich ever.

    all you need is great bread, and a great tomato. Japanese Kewpie mayo doesn't suck either. the very humble Tomato Sandwich. grilled of course because I am not a heathen. today's lunch.

    Fresh tomato sammiches are never frowned upon. Southerners will promptly enjoy a nice creole tomato and often even green tomatoes… sliced, salt and pepper… bread is even optional.

    New restaurant opened this week... Cajun food is now a thing in Iowa ! Haha! I had to try it out and see how it compares to homemade... pretty good without all the work!

    I have been on a chili oil kick. which leads me to think, "what else can I eat with chili oil?"

    the natural answer is homemade, HAND-CUT noodles. I am currently in the midst of figuring out this elusive beast. I live no where near any restaurant the makes handcut noods, so this lesson is a good thing.

    so far? EASY

    one more kneading session to go before the refrigerator quiet time/time out.
