Check out the Camp Chef Mountaineer 2X. Not $500, but not cheap, either. If you like it, you might be able to get it for 20% off when REI has it sale.

Just curious. Why do you need recessed knobs?

    A bunch of junk
I use this grill and it's been amazing. I use it usually atleast 3x a week. Wind is no issue.

Rocking a 17" Blackstone w/ 20lb propane hose and adaptor. Went this route instead of a grill because of the versatility a griddle has compared to a grill. I can cook basically anything on it. Love it.

    Jet boil for coffee.

Upgraded from the single burners that most people have to a dual burner CampChef Teton. The singles are great for if it’s just you and doing simple one pot/pan means. Anything more though it isn’t the greatest for anything more.
So far love this stove it’s got the self ignition on it with simmer control and wind screens also super packable. $89 at big5

I want recessed knobs due to my packing situation. My Coleman doesn't have them, so I always pull the knobs off to keep them from getting broken. I might swing that much $$$ for the REI unit. Early fathers day present to myself.

Camp Chef also has the Everest 2X for half the price. Not truly recessed, but the knobs are somewhat protected from sliding gear next to it.

    The North American Plate
Colorado River friendly. The whole thing is stored inside the fire pan part of the grill. Compact and heavy.

Classic Coleman propane 2 burner for me, I’ve thought about getting something different but it just keeps running like a champ so I’ve stuck with it

I have the same, but older model. The only difference is the latch/locking. I add an electric igniter to it (MeTer Star Grill Igniter Kit AA Battery Two Exits with Spark Plug Wire Length 1 Meters Long (Two Electrodes) CE/CSA Certified https://www.amazon.com/dp/B07BJ17KJS) and no more fumbling around with a lighter. Super easy to add it.

I ran one of those for 15 years. Aside from the sparkers eventually crapping out, it was a highly versatile cooker for two people.

These days- it's all about the flame king. :bananadead:
