I have a hard cap/she'll on my Tacoma. I mainly got it because I have 2, 50lb dogs that I take everywhere with me.

With that said, I think hard tops look kinda dumb and suck whenever I want to put something tall in the back.

Should I get a soft top? How well do soft toppers do at 70mph? What about parked outside for a night in heavy snow?

Softoppers are fine at freeway speeds, even with the sides and back rolled up. I don't know about heavy snow, but I've had a foot of snow on mine several times, without any issues.
