    There’s a pizza chain out here that does what they call a “red skin potato pie” which is roasted red skin potatoes sliced thin, some grilled onions, three kinds of cheese, and a sour cream drizzle. It’s freaking delicious. No red sauce on this one, they do a heavy coat of garlic olive oil on the crust before toppings instead.

    Conecuh sausage ( @yota243 ) with mushrooms and onions. I’ve started pre baking my crusts then topping them and cooking directly on the oven rack for a super crispy crust.

    I pre-bake mine when I'm doing skillet deep dish but never thought to do the regular ones. Good idea!

    Interesting...
    I don’t pre bake my cast iron deep dish. I liberally oil the skillet before adding the dough. Lower the temp to 350° which extends the time to 20-25 minutes, allowing the toppings to cook and the skillet to heat up to fry the crust.
    The thin crust one tonight was cooked at 475° for 8 minutes.
