My wife makes homemade pita bread, it comes out of the cast iron fry pan hot and fresh ready for falafel, humus and tabbouleh, tzatziki, feta in any combination. The quality of the pita breads makes all the difference.

I'm not sure when I'll get to the rest of the steps but I just bought a bag tonight. It looks and sounds too good to not try. :D

    Oh look, another mod....
I love auto-correct! I kept trying to type in "Home made pizza!" and it changed it: Hoe made pizza!

So here you have it, a hoe (me) that made pizza:

It's a basil-garlic crust, with a pesto sauce, old wold style (their words, not mine) pepperoni, bacon, pancetta, Boars Head mozzarella cheese. Topped with: Oregeno, crushed red pepper seeds and Boars Head Parmesan cheese.

No where near my favorite, but I decided to try something new to me.
Augason Farms Black Bean Burger Mix
While it says burger mix, I found the mix contains far too much cumin for burgers. I made one patty, cooked as the directions say. While the outside was nice and golden brown with some crispiness, the inside was still a bit under done and slimy. When expecting burger, all I could taste was taco.
I will no longer use it with the intent of making burgers. Instead, I will make thin 6" patties which will be cooked to a darker golden brown to get more crispiness then crumbled up to make tacos, burritos, and taco salad. I think it will also be fairly good as an addition to the single serving chili I make for myself.
    IMG_20220919_180139.jpg
Edit: 1/4 cup mix, 1/4 cup hot water, 1/8 cup canned corn. Mix the three and let it set for 15min. Make 1/4" thick patty and place into preheated oiled pan on med heat. Cook each side for 4 minutes.
Once cooked, break the patty apart (think ground beef chunk sizes) and put into warmed tortilla with salsa and shredded cheese.
Makes a pretty darn good taco. I will definitely make it again. Cooking for 4 min makes it a nice med/dark brown with a good bit of crispiness.
