I agree if you are dropping them all the way down to 8psi, but not everyone drops them that low. I have times where I’m driving a mixture of rough 2-tracks and county maintained gravel roads. For that 20psi works good for me. Other times it’s a mixture of rough 2-tracks and pavement. For that I usually run 25psi. Yes these pressures are temporary, but long temporary, sometimes weeks or even months.

I've never seen a recommended pressure on the sidewall, just maximum pressure.

Then I googled the sise 285/75R16.
Came to 126 Q in E-load. Also saw 116loadindex but that must have been a C-load.
But check that on sidewal E-load or LRE and see if you find something like AT 80 psi
If you give answer, I will make a pressure/axleload list for you, in wich 90% used of the loadcapacity for 99mph for the pressure. I determined this to give highest pressure with maximum reserve, at wich comfort and gripp is still acceptable.

Then whenever you determined the axleloads acurately, you can look them back in my list, and you have my recomended pressure.

If you also search for GAWR's, GVWR and empty weight, I can make a dangerous estimation of the axleweights to look back in the list.
Determining the real axleweights is the most tricky part in it all.

Does under-inflation increase the risk of having the tire roll off the rim in a turn or at a large turn angle?

Only at verry low pressures like used for offroading .
Most modern rimms have 2 humps to prefent that ( 2x PANG when tire is mounted on rimm).

And for offroading there is a beadlock tire, a inner tire with 50psi filled, but complicated to mount, so only usefull for the offroad die hards.
