    Very Nice. I make a batch of sauerkraut every fall just to keep the skill going.im into how generations before us preserved food. :thumbsup:

    thats how we make it. salt the cabbage and let it sweat a few hours,start mashing the heck out of it.put it in your container and weight it down so its all sumerged. cover with a cloth sit it on a cookie sheet and sit somewhere dark and cool. let it happen. check it every so often till is fermented as sour as you like. put it in the frig to stop fermentation or can it.I ferment mine in the spare bathroom that we dont use.

    I have almost always done all my own processing, not that I enjoy it, I have to admit a little envious about the summer sausage. I tried bologna several times but it just come out like meatloaf.

    Yep, this batch went 3 weeks and it is just about perfect for my taste. I try to have something fermenting in a crock or bucket most of the year.

    Hell ya! My wife and I do a fair amount of canning and I've always got something fermenting in a crock or bucket. Our basement has enough canned stuff to last quite a while if we need.

    usually we cook our bologna in water in a cast kettle over a turkey burner. this year took it over to Dalsons and put it in his smoker. PS seasoning .com. is the go to. you name it they got it:thumbsup:

    Good looking kraut! I've done cucumbers once, they didn't come out quite right. I do a lot of different cabbage preparations and a lots of peppers (especially jalapenos) as my normal go to.

    Busted a broken tine 8 this am from the care taker I just moved Friday afternoon. Son of a gun crossed the creek ahead of me on the far side in thick brush. I picked an open spot about 100 yard shot and when he stepped in I squeezed. Went about fifty yards. Long drag by myself. After sweating and coughing up junk my lungs actually felt better. Sounds strange I know.
