Anyone know what these are? The one the one to the left (5pin connection w/4wires)was taped up to the power mirror wires not being used.

The one on the right was hanging loose and unused.. 6 pin connector with 4/wires ..

I'm trying to add switches and wondering if I could use one of these to wire up rear bumper flush mount lights

No, they don't have any power going to them, you could use the ground wire as a source and switch the ground side of a relay through the switch if you wanted to.
Pin 1 (Green) is Illumination +
    Pin 2 (Green/White) is Illumination -
Pin 3 is the signal wire so for sure don't connect anything to that
Pin 4 (White/Black) is constant Ground

    I wouldn't recommend it.
I wouldn't use those switches for anything more than to trigger a relay anyway, they are only designed to handle a max of 3 amps.

    This. 100%

Dash switches are low current switches made to fire relays off or tell an computer to do something. Place a ground switched relay close to the battery (fused of course) and feed it into pin 3 of the switch and call it good.
