He like the crust on the "just before" chop but overall the flavor of the "overnight" chop.

I've done Elk before but never Ostrich though. One of my close friends brought me 4-5 pounds of ground Venison a couple weekends ago. Was thinking about doing a fatty with some of it, the fat from the bacon will help keep it moist.

I broke in the Blackstone this weekend for mothers day. Did Hibachi for my wife and invited my sister and her family. Made Fried rice (came out really good), ribeye steaks, shrimp, veggies including portabella mushrooms, onions and zuchinni. Got the yummy yummy sauce from our local favorite place. Everyone enjoyed it and was super full so I can't complain.

Trying to decide if I want to smoke some ribs or wings this weekend. Think Saturday I may do some bacon/eggs/pancakes on the griddle.

    Ribs and pancakes

I did a Pitfaced spicy massage butt with some cinnamon bourbon maple syrup awhile back. Did not disappoint.

Little bit of this and that
Pepper ribs from week before last. Turned out decent.

I've been wanting to do some stuff with smoked meats, waffles and some different sweet drizzles. Problem is I need a good waffle maker that I don't need a second mortgage for that makes more than one at a time.

I used store loyalty points for mine so no idea of real cost but can recommend the Breville four waffle unit.

Also check thrift stores, some one may have gotten rid of grandma's old cast iron unit.

We have NOT THIS ONE, but one like this (can't remember the brand) the plates swap out and you can make waffles. Comes out good.

Other option (and what I would do if I needed to buy one today):

You know we are heading to the cabin in NC soon and my wife ALWAYS loves to hit the thrift stores around there. I might follow along and see what they have.

Thank you will check them out.
