Just put 285/70/R17s on my Tacoma. It had a 3” front leveling kit on it so the size of the tires and wheels work as long as I don’t go off-roading for now. Anybody have a solution to the rubbing? Cut plastic? Lift kit?

No special lift kit required. At full compression, your tires will hit the cab mount, firewall, pinch weld, and the inner fenders. Cutting the cab mount, hammering stuff back, and removing pieces of the inner fender is the only remedy to rubbing, with any lift.

You can run 255/70r17 which are skinnier and has little to no rubbing.

Know of any shops in the 925 area that’ll do a good job at cutting away some plastic?

Welcome. You'd have better luck asking in the regional forums for shop referrals.

If you plan on off roading and keeping the 285’s i suggest you get the cab mount chop and pinch weld hammered at a shop. That will save a lot of hassle later on. Milo is a go to for a lot of people in the Bay Area. He can do the plastics in addition to the cab mount chop and pinch weld: https://www.tacomaworld.com/threads/milogen-fabrications.490657/

If you plan on just the fender liners, I’d suggest a DIY. You can push a lot of the plastic back with a heat gun, or a box cutter slices through that stuff easily.

I had 33s with a 2" lift. I didn't have any rubbing issues outside of the mudflaps because the backspacing plus offset of my wheels wrapped in 285/75/16 allowed for a nice tight fit.

It wasn't until I went 35's that I started looking at CMC's but ended up with a cab relo instead.
