When was the last alignment done?

I had my truck aligned after replacing the LCA bushings about a year ago, and it drove straight and handled well. Recently, I replaced the LCAs with new LCAs from Toyota with rubber bushings, then had it aligned again. Drove great again after the alignment. Then I got new Toyota lower ball joints, and replaced those, but also took off the front shocks and springs to make an adjustment to the rubber isolator on top of the spring. When I put it all back together, I thought I might be able to avoid having it aligned again. However, it was acting exactly like you mention - following the tracks in the road, and had an overall feeling of instability. I knew then it needed another alignment. Did that, all is well again.
