    I made this on Monday. I didn't take pictures, sorry. I can't recommend this enough. I used chicken broth because I didn't read the recipe and got to that step and went "Oh shit", but had chicken broth so I rolled with it.

    Super simple, quick, easy, and delicious. I hate recipes that take 4 hours and an engineering degree. Cook a steak, throw some red wine and broth in the pan after with some shallots and butter, cook it down. :drool:

    I understand what your saying. I came from a barrel type smoker where you had to make sure it was going and not going out. Watch for flame ups and be the temp gauge. It took a lot for me to change over and some friends of mine are right there with you by getting mad at me. But damn, it sure does make things easy.

    Look at it this way... instead of spending all day tending fire to cook a piece of meat.. you can forget about the fire and have time to make all the sides too. Once you've mastered making the whole meal, including dessert, in the pellet smoker, you question why you've wasted so much time in the past.

    Some people do not like change or technology and that is ok. There are people still afraid to use a propane grill! There are also people who are afraid of microwaves and air fryers.

    Just because something "has always been done this way" doesn't make it the best way.

    You just get people who see it as a right of passage, too. Almost militantly, "I had to do it this way, so now you do too!" Just grumpy that a soccer dad can throw in a brisket and have a day with the family and come back to a wonderful brisket, instead of tending to a smoker all day.

    I'm not against them, I want one, I just can't justify the cost vs. how often I use it/how well I tend to take care of things. I'm heavy handed, I don't see the point in spending extra on some luxuries, etc. Whatever, not the point.

    Re: Old stuff vs. new - I hate batteries. I still use an analog meat thermometer, and can't stand these meat pens/instant read/digital battery etc shenanigans. Love it if that's your thing, but I'm sticking with sputnik.

    If you want to maintain the old way for the art of it/etc, cool, but bashing on the people using the new stuff ain't cool. Both in smoking ham, and radioing ham :spy:

    I don't know if you saw in the other threads but I recently got a new toy that's a pellet smoker on one side, a gas grill on the other and a griddle plate that fits on top of the gas grill.

    As long as you're not messing with food safety rules... I don't care how it's cooked.

    I did not! Sounds fun! I have a charcoal barrel grill/propane barrel grill side by side thing. I wanted one without the side burner, but now I use it to start the charcoal in seconds, no fuss, it's great!

    It looks like the cheapest traeger from HD is 600. I'm sure I can look elsewhere but that's about what I expected to see. I might keep my eye out for a used one if this grill starts to act up. Need to clean it a bit. But I replaced the flavorizer bars last year, probably will do next year, works great! When it dies I might look at a pooper, or independent grills for propane and smoking.



    I just looked at your new toy - that thing's awesome! And way more reasonably cost than I expected to find it o_O .... that's dangerous information to know.

    If you don't want or need something right kw.. the best time to buy them, especially from Walmart is at the end of the summer when things go on sale to make room for the holiday stuff.

    I got $200 off of mine just because the box was badly damaged. I took the risk and whe I got it home and all together, there's not a scratch on it.

    I personally think Traeger's over priced and their quality has gone way down since they sold out

    I just got the same one from Home Depot for the same price. Well, 10% less with the military discount. After looking at the current price of the Weber grill I have, I'm surprised I didn't get one sooner, ha. Taking the maiden voyage this morning too.

    The red was the best I’ve ever used, I’ll look for the green. The last Enchiladas Verde I made I used Herdez brand bottled sauce which was very good.

    I have tried green sauce on mashed potatoes before, after someone recommended it. I wouldn't say it was bad, but it was one of those things where you don't want it to taste that way.

    I might try it with roasted and more bits to it, that might be good. Actually...I need to plan dinner tonight.... :spy:
